Sangiovese, Santa Ynez Valley, 2007

Sangiovese, the great grape of the Chianti region of Italy, grows exceptionally well on the hillside slopes of Santa Barbara County's Ballard Canyon vineyards. Our Rusack Sangiovese is a great example of a California style version of this Italian gem.

Fruit forward and well balanced with aromas and flavors of
raspberries, currants, maple syrup and cocoa. Sangiovese is
well known for its food pairing versatily and pairs well with grilled fish, pork, and wild game.

The 2007 vintage is crafted from Sangiovese from our estate vineyard, complemented with grapes from our neighbor, the Stolpman Vineyard. After the grapes were removed from their stems, they were cold-soaked and then fermented in small, open-top bins; the must was punched down by hand twice a day. The wine was then aged in a mixture of new (36%) and neutral French oak barrels for 10 months. 424 cases were produced.

Optimal Storage Conditions:
Constant temperature, 55-58°F, darkness.

Aging Potential: To enjoy young fruit aromas, consume within 1-3 years of bottling date. For extended aging under ideal conditions, consume within 3-10 years of bottling date (August 2008).
